Banana Bread
Makes one loaf
- ½ cup Butter
- 1 ¼ cups Sugar
- 2 large Bananas (ripe), mashed
- 2 large Eggs, room temperature
- ½ cup Yogurt (plain, whole-milk)
- 1 tsp Vanilla Extract
- 1 cup All-purpose Flour
- 1 cup White Whole Wheat Flour
- 1 tsp Baking Soda
- ½ tsp Salt
- Preheat oven to 350°F. Spray a loaf pan, or line with parchment paper.
- In a small saucepan, heat the butter over low heat, stirring occasionally until the solids brown (5 minutes). Remove from heat, continue stirring for a minute or two, then let cool.
- In a large bowl, mix together sugar, mashed bananas, and brown butter. After mixing, stir in eggs, yogurt, and vanilla.
- In a separate bowl, whisk both flours, baking soda, and salt. Fold gently into batter until just combined.
- Pour batter into loaf pan and bake for 1 hour, until a knife inserted in the center of the loaf comes out clean.
