Chile con Queso
Takes 10 minutes
- Pepper Jack Cheese, shredded
- Milk
- Sodium Citrate
- Tomato Paste
- Sofrito Paste (optional)
- Chili Powder
- Cayenne Powder
- Cumin Powder
- Paprika
- Shred or thinly slice cheese, set aside covered.
- Stir sodium citrate and remaining ingredients into milk over medium heat, until dissolved and uniform (about 3 minutes).
- Slowly add and melt cheese a handful at a time, stirring regularly (about 5 minutes).
- Once all cheese is melted, turn off heat and continue stirring for a minute.
