Flour Tortillas

Makes 12 taco-sized tortillas, takes 45 minutes

  1. In a medium mixing bowl, combine all ingredients and knead for five minutes.
  2. Split into 2-oz (56 g) dough balls and cover. Let rest for 20 minutes.
  3. Heat a skillet or cast iron griddle over medium heat (to between 350–400°F).
  4. Roll each dough ball into a tortilla shape and lay onto cooking surface, 30 seconds each side.

1½ tsp (9 g) Salt
¼ tsp Baking Powder
80 g Butter
219 g Water
