Cajun Beanrice

Takes 2½ hours

This “beanrice” meal is modular; I typically make large batches to freeze. This one is a minimalistic take on red beans and rice, and I usually make some cornbread to accompany it.

  1. Combine beans and broth with of water in a large pot. Bring to a boil and simmer covered for 90 minutes.
  2. Add the protein, vegetable, seasoning, serrano, and onion, along with of water. Simmer covered for another 60 minutes.
  3. Serve with of cooked white rice.
