Chile con Queso

Takes 10 minutes

  1. Shred or thinly slice cheese, set aside covered.
  2. Stir sodium citrate and bouillon paste into milk over medium heat, until dissolved and uniform (about 3 minutes).
  3. Slowly add and melt cheese a handful at a time, stirring regularly (about 5 minutes).
  4. Once all cheese is melted, turn off heat and continue stirring for a minute.
