English Muffins
Makes 9 muffins, takes 2 hours
- 340 g All-Purpose Flour
- 284 g Milk
- 21 g Butter
- 14 g Sugar
- 7 g Dry Yeast
- 7 g Salt
- Corn meal
- Mix all wet ingredients together until dissolved (~1 minute).
- Add flour and mix well (~2 minutes).
- Let rest and rise for up to an hour.
- Divide dough and shape into nine rounds.
- Place on a baking sheet and rest up to another hour.
- Heat griddle to 300°F.
- Using corn meal on hot surface, cook 8–10 minutes each side.
