Gumbo
Takes 2 hours
- 1 White Onion, chopped
- 1 Bell Pepper, chopped
- 3 stalks Celery, chopped
- 3 cloves Garlic, chopped
- 1½ cups Okra, sliced
- 1 lb Protein
- 4 oz Beer
- 5 Tbsp Neutral Oil
- 5 Tbsp All-purpose Flour
- 4 cups Broth
- 1 Tbsp Cayenne Pepper
- 1 Tbsp Cajun Seasoning
- Black Pepper
- Heat oil over medium-high heat.
- Add flour and mix in thoroughly, then continue stirring until the roux is a chocolate brown color (10 minutes).
- Add beer, onion, bell pepper, celery, and okra into roux, and cook 3 minutes.
- Add seasoning and garlic, and cook until fragrant (1 min).
- Add broth and water, bring to a boil, then simmer for 1 hour.
- Add protein, and simmer for another 30 minutes.
- Remove from heat and serve with rice.
