Kolaches

Makes 30 kolaches, takes 1 hour

Streusel

  1. In a large mixing bowl, mix the yeast, sugar, half the milk, and half the flour. Rest for 15 minutes.
  2. Mix the remaining dough ingredients and knead until smooth.
  3. Cover and let rise for 1 ½ to 2 hours, until doubled.
  4. Mix the topping ingredients just until crumbs form.
  5. Cook the fruit filling ingredients over medium heat until the fruit is tender and the filling is thick.
  6. Preheat the oven to 375°F.
  7. Divide dough into 28g pieces and shape into flattened balls.
  8. Let rise for 30 minutes on a baking sheet.
  9. Deeply indent the dough balls, and add a tablespoon of filling and a teaspoon of topping on each.
  10. Bake the kolaches until golden brown, 20 to 25 minutes.
