Kolaches
Makes 30 kolaches, takes 1 hour
Dough
- 390 g All-Purpose Flour
- 283 g Milk, lukewarm
- 2½ tsp Instant Yeast
- 1 Tbsp (14 g) Sugar
- 6 Tbsp (85 g) Unsalted Butter, softened
- 1 large Egg
- 1 tsp Lemon Zest
- ¾ tsp Salt
Topping
- ⅓ cup (67 g) Sugar
- ¼ cup (30 g) All-Purpose Flour
- 2 Tbsp (28 g) Unsalted Butter, melted
Fruit Filling
- 1 cup Fruit
- ¼ cup (50 g) Sugar
- ½ Tbsp (14 g) Cornstarch
Streusel
- 200 g All-Purpose Flour
- ½ cup Brown Sugar
- ¼ cup Sugar
- 1 tsp Ground Cinnamon
- ¼ tsp Salt
- ½ Unsalted Butter, melted
- In a large mixing bowl, mix the yeast, sugar, half the milk, and half the flour. Rest for 15 minutes.
- Mix the remaining dough ingredients and knead until smooth.
- Cover and let rise for 1 ½ to 2 hours, until doubled.
- Mix the topping ingredients just until crumbs form.
- Cook the fruit filling ingredients over medium heat until the fruit is tender and the filling is thick.
- Preheat the oven to 375°F.
- Divide dough into 28g pieces and shape into flattened balls.
- Let rise for 30 minutes on a baking sheet.
- Deeply indent the dough balls, and add a tablespoon of filling and a teaspoon of topping on each.
- Bake the kolaches until golden brown, 20 to 25 minutes.
