Mexican Beanrice
Takes 2½ hours
This “beanrice” meal is modular; I typically make large batches to freeze.
- Black Beans, dry
- Protein, chopped
- Vegetable Broth
- Dehydrated Vegetables
- Adobo Seasoning
- Chili Powder
- Ground Cumin
- Serrano, diced
- White Onion, diced
- Combine beans and broth with of water in a large pot. Bring to a boil and simmer covered for 90 minutes.
- Add the protein, vegetables, seasoning, serrano, and onion, along with of water. Simmer covered for another 60 minutes.
- Serve with of cooked white rice.
