Salsa Fresca
Makes about 3 cups
- 4–5 Plum Tomatoes, diced
- ½ tsp Garlic, minced
- ½ cup White Onion, finely chopped
- ⅛ Lime Juice
- 1 Tbsp Apple Cider Vinegar
- 1 Tbsp White Distilled Vinegar
- 3 Jalapeños, finely chopped
- ¼ cup Cilantro, coarsely chopped
- 1 Tbsp Olive Oil (optional)
- Salt to taste
- Put tomatoes, garlic, onion, lime juice, vinegar, jalapeños, and cilantro in a bowl and mix well.
- Pulse mixture in a food processor to desired texture.
- Add olive oil, if desired, and salt. Let mixture sit for 30 minutes to allow flavors to develop.
