Chipless Cookies

Takes about 45 minutes for 1 batch, 15 minutes per additional

Medium BowlStand Mixer
284 g All-Purpose Flour150 g Sugar150 g Brown Sugar½ Cup Unsalted Butter1 Tbsp Vanilla Extract1 tsp Baking Powder½ tsp Baking Soda½ tsp Salt1 Egg, room temperature1 Egg Yolk, room temperature
  1. Preheat oven to 400°F.
  2. In a medium bowl, whisk all-purpose flour, baking powder, baking soda, and salt together.
  3. In a stand mixer, cream together unsalted butter, sugar, and brown sugar until fluffy.
  4. Scrape down mixer bowl, then add egg, egg yolk, and vanilla extract. Mix until smooth.
  5. Add flour mixture, and beat on low until just combined.
  6. Freeze dough for 20 minutes.
  7. Form medium-sized (2 oz) dough balls.
  8. Bake for 10 minutes.
