Kolaches

Makes 30 kolaches, takes 1½ hours

Dough

Large Mixing BowlBaking Sheet
390 g All-Purpose Flour284 g Milk, lukewarm1 Tbsp Sugar2½ tsp Instant Yeast1 tsp Lemon Zest1 Egg, large1 g Salt
  1. In a large mixing bowl, mix instant yeast, sugar, milk (142 g), and all-purpose flour (195 g).
  2. Rest for 15 minutes.
  3. Mix in all-purpose flour (195 g), milk (142 g), egg, lemon zest, salt and knead until smooth.
  4. Cover and let rise until doubled, 1 hour.
  5. Prepare any fillings and toppings you want (see below).
  6. Preheat the oven to 375°F.
  7. Divide dough into pieces and shape into flattened balls.
  8. Let rise for on a baking sheet.
  9. Deeply indent the dough balls, and add a tablespoon of filling and a teaspoon of topping on each.
  10. Bake the kolaches until golden brown, 20 minutes.

Topping

⅓ Cup Sugar¼ Cup All-Purpose Flour2 Tbsp Unsalted Butter, melted
  1. Mix sugar, all-purpose flour, and unsalted butter just until crumbs form.

Fruit Filling

  1. In a small pan, combine fruit, sugar, and cornstarch; cook over medium heat until the fruit is tender and the filling is thick.

Streusel

  1. Mix all-purpose flour, brown sugar, sugar, ground cinnamon, salt, and unsalted butter.
