Orange Taco Sauce

Makes 2 cups, takes 45 minutes

1 Cup Neutral Oil½ Cup Chile De Arbol½ Cup Water⅓ Cup Apple Cider Vinegar4 Roma Tomatoes, quartered2 Large Dried Chiles1 White Onion, quarteredGarlic
  1. Spread roma tomatoes and white onion onto a baking sheet, drizzle with some of the neutral oil and sprinkle salt on top. Broil until charred (20 minutes).
  2. Saute garlic and large dried chiles in some oil on low heat for 10 minutes.
  3. Add the garlic, chiles, chile de arbol, apple cider vinegar, and water into a blender and let soak for 5 minutes.
  4. Blend on high speed for 2 minutes.
  5. Reduce blender to low, and drizzle in the remaining oil.
  6. Add the tomatoes and onion to the blender, and blend on high speed until smooth.
  7. Taste and season, and store refrigerated.
